Flatbread 2 Ways

Our family has an annual weekend called "Cousinpalooza" in February.  We get together, eat, drink, sing, play in the snow if the weather allows.  It's an awesome time filled with laughter, love and this year, spreading germs.  The nastiest dang virus made it's rounds.  Now, that's a lot of love.  However, before we all came down with said ridiculously long lasting virus, we got to indulge in some fab food, this flatbread included.

I couldn't make up my mind, so I came up with two.  The ingredients are so simple and really, to give you exact measurements would be a bit silly.  Add as much as you'd like.  Both of these have such fantastic flavour and texture.  Have good honey on hand.  They both benefit greatly from a nice drizzle.

Flatbread 2 Ways

Makes 4 Flatbreads

4 store bought Flatbreads

Pear, Pancetta & Blue - Makes 2 Flatbreads

Olive Oil
1-2 Pears, thinly sliced
1/2 cup Pancetta or Bacon, cooked and crumbled
1/2 -3/4 cup Blue cheese, Gorgonzola or Stilton, crumbled
Baby Arugula
Honey
Pepper

Preheat oven to 400F

Drizzle a little Olive Oil on 2 of the flatbreads.  Add the pear, then the cheese, then the bacon.  Bake for about 8-10 minutes.  Remove from the oven, sprinkle with fresh ground black pepper, add fresh Arugula and drizzle with honey.

Goat Cheese and Oven Roasted Tomatoes with Thyme - Makes 2 Flatbreads

Olive Oil
1 pint of Cherry Tomatoes
1 Tbsp freshly chopped Thyme leaves
Salt & Pepper
1/3 cup Goat Cheese
Honey or Balsamic Glaze

Preheat oven to 400F.

On a sheet pan, covered in parchment paper, toss the tomatoes with a drizzle of olive oil, 1/2 of the Thyme leaves and Salt & Pepper to taste.  Roast for 10-12 minutes, or until they just start to burst a little.

Drizzle a little Olive Oil on 2 flatbreads.  Crumble each one with the goat cheese, add the oven roasted tomatoes, rest of the fresh Thyme leaves and some freshly cracked black pepper.  Bake for about 8-10 minutes.  Remove from the oven and drizzle each one with a little honey or Balsamic Glaze.

Bacon Tomato Caesar Pizza

It's been a few weeks since I've posted anything....was a tad under the weather with no appetite or urge to cook.  Sooooo not like me.  However, the urges are back.  Phew!
While cruising around Pinterest the other day I spotted a pizza that made me drool....  Must. Make. This. Pizza.  I found it on a blog, Bev Cooks and she calls it BLT Pizza.  I've adapted my version of her version.  I've never blogged about another blogged recipe (does that make any sense?) but I felt the need to share this.  It's super easy and really tasty.  I have however, changed up a few things...didn't make my own dough due the fact we needed to eat within the hour so I used  super thin Naan pizza crusts, I added extra garlic and instead of romaine, I added fresh Basil leaves.  Wicked tasty, warm, creamy and garlicky with pops of freshness from the tomatoes and Basil.  Undeniably nummy.
Similar to my Warm Potato Caesar Salad, you can use either homemade or store bought.  I opted for store bought out of ease and I used Renee's, which is my go to when I don't have homemade.
I suggest making this...even my kids inhaled it.  BBQ it, bake it....whatever floats your boat.  Just make it.

Bacon Tomato Caesar Pizza

Makes 2 Pizzas

2 thin crust pizza crusts or 4 Naan
1/2 cup homemade or store bought Caesar Dressing (I used Renee's)
Pinch of Chili Flakes
1 clove garlic, finely chopped
8 slices of good bacon, cooked and crumbled
1 pint of cherry tomatoes, sliced in half
2 cups Mozzarella Cheese, shredded
Basil Leaves, as many as you want

Preheat the oven to 425F....or your BBQ.
Combine the dressing, chili flakes and garlic in a bowl.  Spread on the pizza crusts.  Sprinkle with half the cheese, the tomatoes and bacon.  Tumble over the rest of the cheese.
Bake for 8-12 minutes, keeping an eye on it after 8 minutes to make sure it doesn't burn.  Remove from the oven and scatter over the basil.
Drool, slice, serve.

Brie Bacon and Cranberry Flatbread

This is my 100th Post!!!  I love this blog. It's a hobby, keeps me entertained, creative and cooking.  Always cooking.  I make no money doing this but I gain major satisfaction knowing people are reading it and trying the recipes.  Thank you to all that read!!!  I've had over 9300 hits and that number goes up everyday.
This recipe came to mind while wondering what to make as an appetizer for a cookie exchange I have with my cousin's, aunt and mom.  I tried it out on the girls only without the walnuts and touch less Dijon....it was really tasty.  The next day, I tried it out on my husband only this time amping up the Dijon slightly and adding the walnuts.  SLAM DUNK people!!  It was soooo good and the man moaned his way through it and as I've said before, that's a good sign. This makes an amazing appetizer and it's so simple.  Sweet, salty, savory, creamy....seriously, what's not to like.
I used a jarred higher end cranberry sauce from Epicure Selections but you could most definitely use leftover or another good quality sauce.

Oh yeah.......

...mouthwatering ridiculously good.

Brie, Bacon and Cranberry Flatbread

Makes 16 Pieces

2 Naan Bread
3 tsp Dijon Mustard
1/4 cup good quality Cranberry Sauce
4 slices of cooked bacon or pancetta, crumbled or sliced
200 gr Brie (1 small wheel), sliced
3 tbsp toasted Walnuts

Pre-heat the oven to 350F.  Layer each flat bread with each of the ingredients in the order above.  Place in the oven (I did them directly on the racks) for 5-7 minutes.  Slice into 8th's and serve!
